【正文】 珍品。從北至南，從東到西，中國的地理、氣候差異極大，因而飲食風(fēng)格迥異。通常來講，人們依據(jù)地域，以烹飪方式、味道喜好的不同籠統(tǒng)劃分菜系，廣為接受的就是川、魯、湘、粵、浙、蘇、閩、徽八大菜系。簡單說，川菜偏辣、魯菜清淡，蘇菜細(xì)膩，粵菜本色等等，但這樣籠統(tǒng)的概括顯然難以服眾，絕大多數(shù)中國人也很難說清八大菜系的異與同。事實(shí)上，即使相鄰的兩個城市也各有特色美食，口味不一，八大菜系顯然小瞧了中國美食的博大與廣闊。所謂一方水土養(yǎng)一方人，湖南的辣妹子性格爽快、脾氣火爆，江南的美女，明眸皓齒、溫婉而笑，山東的漢子古樸拙實(shí)、……而實(shí)際上，正如西方的一句諺語：你吃什么，決定了你是什么樣的人，水土不同，飲食風(fēng)俗迥異，潛移默化地塑造著當(dāng)?shù)厝说男愿窕?，而不同性格又反過來影響著人們的吃食喜好。Not only food can be served in myriad forms, but also its ingredients can be astoundingly many and diverse. However, such summarization is too simple to satisfy the masses and most Chinese can no tell exactly the similarities and differences among the 8 cuisines. In fact, even between two adjacent cities, each has its own speciality and favoured flavours.
