【正文】 。實際上, 已經(jīng)有不少中國菜的漢語拼音漸漸融入了英語。東坡肉:Dongpo braised pork ( braised pork)A name after a famous ancient Chinese poet Su Dongpo , who invented his special way of braisingpork. See the story on the back of the menu 。為了較好地保存文化寓意,我們可采用直譯菜名然后用加注釋的方法解釋其包含的文化典故。以上菜名翻譯放棄了漢語中的比喻詞和象征詞,直接揭示出菜的原料和烹調(diào)法,這樣雖然破壞了菜名美,卻一目了然可讓外國人容易理解和接受。做到避其比喻、夸張手法之“虛”,譯其原料、烹調(diào)方法之“實”。在翻譯這種菜名時,由于“找不到對應(yīng)的目標(biāo)語時,只好放棄形象的比喻的描寫手段,略其形象色彩,退而求其文本上的不沖突做到概念意義上的轉(zhuǎn)換”[5 ] 。2. 4. 1 避“虛”就“實”法 為了使菜名具有美感,許多中國菜名采用夸張、比喻的手法命名。如按菜名直譯出來就很難使外國讀者把菜名和品嘗的菜肴聯(lián)系起來。川味牛肉絲(shredded beef , Szechuan style)shredded beef with julienned carrot s and celery in hot pepper sauce 。京炒肉絲(shredded pork , Peking style)shredded pork saut233。ed with black mixed vegetables in chef’s spicy hot pepper sauce 。ed with spring onions and bamboo shoot s 。這樣可以讓外國人更好地了解中國不同地域的飲食文化。這種現(xiàn)象反映在菜名中就表現(xiàn)為用某地名來代表某種獨特的菜肴烹調(diào)方法和偏愛的菜肴口味,如:“四川牛肉”意味著麻辣、“潮州魚丸”意味著爽滑等。例如:家常豆腐( tofu , home style) 、牛肉炒粉( chow fun of beef ) 、豬肉餃子( jiaozi of pork filling) 、揚州炒飯( Yangzhou chow fan) 。西方國家一些中餐館菜名音譯以廣東話發(fā)音基礎(chǔ)
