【正文】 轉(zhuǎn)變，選擇性和理性化消費特點日趨增強(qiáng)。人們消費更加注重衛(wèi)生、環(huán)境、服務(wù)、特色等需求，追求品牌店、特色店和品牌餐飲企業(yè)的勢頭更加明顯。餐飲市場上個性化特色經(jīng)營突出，品牌、特色餐飲倍受青睞。綠色餐飲引領(lǐng)未來發(fā)展趨勢餐飲業(yè)蓬勃發(fā)展的背后也存在許多問題，如整個餐飲行業(yè)發(fā)展缺乏統(tǒng)一規(guī)劃，市場推入缺乏統(tǒng)一標(biāo)準(zhǔn)，市場秩序不規(guī)范，不少餐飲企業(yè)餐桌污染嚴(yán)重，環(huán)保衛(wèi)生不符合標(biāo)準(zhǔn)，食品不安全、不令人放心；原料的殘留物超標(biāo)。餐飲業(yè)需要更加關(guān)注餐飲企業(yè)的整體素質(zhì)，凈化整個行業(yè)的市場環(huán)境，使餐飲符合人們綠色消費的需求。目前，中國飯店協(xié)會根據(jù)國外的情況，在國內(nèi)推行了“綠色飯店”，綠色餐飲油然而生，并將成為餐飲業(yè)發(fā)展的趨勢。參考文獻(xiàn)： [1][M]海天出版社,1991年8月.
