【正文】 渤海大學本科畢業(yè)設(shè)計（論文） 年產(chǎn) 5000 噸冰淇淋車間設(shè)計 Ice Cream Plant Design of Annual Output 5000 Tons 學 院（系）： 化學化工與食品安全學院 專 業(yè)： 食品科學與工程 渤海大學 Bohai University 年產(chǎn) 5000 噸冰淇淋車間設(shè)計 I 摘 要 本論文進行了年產(chǎn) 5000 噸冰淇淋車間設(shè)計，初步對冰淇淋車間設(shè)計做出了說明，并繪制了設(shè)計圖紙 2 張，工廠總平面設(shè)計和車間工藝流程設(shè)計。 首先介紹了冰淇淋的定義、分類與行業(yè)標 準，同時對冰淇淋的工藝流程做詳盡闡述；然后通過區(qū)域調(diào)研進行廠址選擇、廠區(qū)總平面設(shè)計和車間工藝流程設(shè)計；再次，對冰淇淋加工過程進行物料衡算、設(shè)備選型、能量與水電汽的衡算；最后設(shè)定企業(yè)管理組織架構(gòu)，實施環(huán)境保護規(guī)劃并進行污水處理，并對冰淇淋工廠的總投資、回收期盈虧平衡進行估算與分析。通過估算可知，本項目每班可產(chǎn)冰淇淋 9 噸，總投資 1205萬，年利潤 1230 萬元，廠區(qū)總面積 3000m2，資金回收期約為 年，當生產(chǎn)利潤率為 %時即可達至盈虧平衡點。 本項目符合可持續(xù)發(fā)展的原則，最大程度地節(jié)約了能源。同時， 有效促進了地方經(jīng)濟發(fā)展，解決部分下崗工人的就業(yè)的問題，是具有較高附加值和投資回報率的項目。 關(guān)鍵詞 ： 冰淇淋；工藝流程；車間設(shè)計 年產(chǎn) 5000 噸冰淇淋車間設(shè)計 II Ice Cream Plant Design of Annual Output 5000 Tons Abstract This study designed an ice cream factory of an annual output of 5000 tons ice cream, preliminarily explained the design of an ice cream factory, and then made 2 drawings of it: architecture design of the factory and design of the workshop operation process. First, this study introduced the definition, classification and industry standard of ice cream, meanwhile, expounded the operation process of ice cream。 then carried out the site selection and architecture design of the factory through regional research. Thirdly, made the material balance calculation, equipment selection, energy and water vapor balance calculation on the ice cream manufacture process。 finally, set the management structure, made a plan for environmental protection and sewage treatment, and analyzed the total investment and the payback period of the ice cream factory. The result showed that the project can produce 9 tons of ice cream per class with a total investment of million, the profit for the year of million Yuan, plant area of 3000 m2, annual profit of 12300000 Yuan, and the payback period was about years, when the production profit margins of % to the BEP. This project was in accordance with the principle of sustainable development and largely satisfied the energy saving request. At the same time, effectively promoted the development of local economy, solved the employment problem of laidoff workers, which was a project with high addedvalue and high rate of return. .
