The experiment applied singlefactor test to confirm the influential elements of the extraction technology of plantains flavonoid, including ethanol concentration, solidliquid ratio, microwave irradiation time, microwave power, time and temperature of water bath, and the orthogonal experiment to make sure the optimum technological conditions .The results showed that: the optimum conditions of microwaveassisted extraction plantain flavonoid were 70% ethanol concentration, ratio of solid to liquid 1:40, 700 W microwave power, 80 s microwave time, h bath time, and the temperature is 80 ℃ . The extraction rate of flavonoid under such circumstance was %. So, Microwaveassisted extraction is a timesaving and highefficient method than ordinary extraction.
