水籽粒殼子葉由表4中的數(shù)據(jù)得,研磨浸泡時(shí)無(wú)論籽粒、殼或是子葉,反應(yīng)液中的植酸含量為鹽酸(pH=)鹽酸(pH=)氫氧化鈉(pH=8)氫氧化鈉(pH=10)蒸餾水,則殘留于蠶豆內(nèi)的植酸最少;溶解于蒸餾水中的植酸最少,則殘留于蠶豆內(nèi)的植酸最多。取8ml提取液加入1ml、3%NaOH溶液,補(bǔ)加蒸餾水到30ml。所以有三種形式兩種處理共六個(gè)實(shí)驗(yàn)對(duì)象,將其分別用兩種濃度的堿浸泡液和兩種濃度的酸浸泡液浸泡,并用蒸餾水浸泡以作參照。植酸又名肌醇六磷酸,分子式C6H18O24P6[3]。關(guān)鍵詞:蠶豆 植酸 抗?fàn)I養(yǎng)因子 浸泡處理The impact of alkali soaking etc. for the content of phytic acid in the faba beanAbstractThis issue aims to research the nutritional factor—phytic acid in the faba bean. Soaking faba bean from choosing acid soaked fluid and alkali soaked fluid of different concentration, and determining the content of phytic acid respectively. Compare and find the conclusion, soaking the faba bean with mild acid can reduce the phytic acid most, the effect of mild acid is better than alkali or water.
