The in vitro antioxidant activities of three typical samples selected from them were studied. The results showed that: ? Compared with native starch, the amylose content of dualretrogradation of all samples have more significant increase。 The average polymerization, solubility and swelling factor of all samples have greatly increase. Impacts of two retrogradation time on amylose content, amylose leaching and swelling factor were not significant, while their average polymerization have more significant increase, the solubility have more significant decrease. ? The contents of ready digestible starch(RDS), slowly digestible starch(SDS), resistant starch(RS) of all samples were measured. It was found the slowly digestible starch(SDS) contents of all samples can be improve by dualretrogradation treatment. ? By determination of total antioxidant activity, inhibition of lipid perxidation, scavenging ability of DPPH free radical, ABTS free radical, superoxide anion and nitrite. The in vitro antioxidant of three typical samples can be evaluated. It was found that in 210mg/ml concentration range, the in vitro antioxidant activities increase with their increase of
