12 結(jié) 論 13 參考文獻 14 致 謝 15 哈爾濱學院本科畢業(yè)論文(設計) 1 摘 要 吊白塊又名甲醛次硫酸氫鈉 (CH2(OH)SO3Na),對人體有很大的危害,嚴禁在食品中使用,但不法商販在米粉、面條、粉絲中使用屢見不鮮。目前沒有測定吊白塊的國家標準方法,我們采用乙酰丙酮法和鹽酸副玫瑰苯胺法測定粉絲和豆腐制品中吊白塊,討論了食品中吊白塊的定量測定的幾種方法,其中分光光度法測定食品中吊白塊含量快速而且準確,適應現(xiàn)場測定和基層單位推廣應用。吊白塊在酸性或受熱條件下分解,產(chǎn)生甲醛和亞硫酸氫鈉,甲醛在銨 鹽存在下,與乙酰丙酮作用,生成黃色化合物。亞硫酸氫鈉與四氯汞鈉反應,生成穩(wěn)定的絡合物,再與甲醛及鹽酸副玫瑰苯胺作用生成紫紅色絡合物,根據(jù)甲醛和亞硫酸氫鈉 (以二氧化硫計 )含量比值在 10:12~10:35 之間而確定檢品中是否有吊白塊的存在,根據(jù)甲醛含量定量吊白塊的量。經(jīng)過試驗測得所取樣品中,粉絲中吊白塊的含量為;干豆腐中吊白塊的含量為 。 關鍵詞:定量;分光光度法;吊白塊 哈爾濱學院本科畢業(yè)論文(設計) 2 ABSTRACT DiaoBaiKuai named hydrogen sulfate sodium (CH2 (OH) SO3Na), which have great harm to human body, is strictly prohibited to use in food. The matter is mon used in rice, noodles and fans by peddleriers. There is no DiaoBaiKuai determination of national standard method. The method or spectrophotometry to determine DiaoBaiKuai in food is discussed in this paper .As the feature is fast and accurate content, the method is adapt to the field testing and basic unit in acid or heated conditions, to produce the deposition of formaldehyde and hydrogen sulfite of sodium, formaldehyde in the presence of the ammonium salt, and acetyl acetone role, produce the yellow pounds.
