【正文】 渤海大學(xué)本科畢業(yè)設(shè)計(jì)（論文）年產(chǎn)5000噸冰淇淋車(chē)間設(shè)計(jì)Ice Cream Plant Design of Annual Output 5000 Tons 學(xué) 院（系）：化學(xué)化工與食品安全學(xué)院 專(zhuān) 業(yè)： 食品科學(xué)與工程 學(xué) 號(hào)： 0915**** 學(xué) 生 姓 名： 西溪然 入 學(xué) 年 度： 2009 指 導(dǎo) 教 師： 呂長(zhǎng)鑫 完 成 日 期： 2013年5月27日 渤海大學(xué)Bohai University27 / 34摘 要本論文進(jìn)行了年產(chǎn)5000噸冰淇淋車(chē)間設(shè)計(jì)，初步對(duì)冰淇淋車(chē)間設(shè)計(jì)做出了說(shuō)明，并繪制了設(shè)計(jì)圖紙2張，工廠總平面設(shè)計(jì)和車(chē)間工藝流程設(shè)計(jì)。首先介紹了冰淇淋的定義、分類(lèi)與行業(yè)標(biāo)準(zhǔn)，同時(shí)對(duì)冰淇淋的工藝流程做詳盡闡述；然后通過(guò)區(qū)域調(diào)研進(jìn)行廠址選擇、廠區(qū)總平面設(shè)計(jì)和車(chē)間工藝流程設(shè)計(jì)；再次，對(duì)冰淇淋加工過(guò)程進(jìn)行物料衡算、設(shè)備選型、能量與水電汽的衡算；最后設(shè)定企業(yè)管理組織架構(gòu)，實(shí)施環(huán)境保護(hù)規(guī)劃并進(jìn)行污水處理，并對(duì)冰淇淋工廠的總投資、回收期盈虧平衡進(jìn)行估算與分析。通過(guò)估算可知，本項(xiàng)目每班可產(chǎn)冰淇淋9噸，總投資1205萬(wàn)，年利潤(rùn)1230萬(wàn)元，廠區(qū)總面積3000m2，%時(shí)即可達(dá)至盈虧平衡點(diǎn)。本項(xiàng)目符合可持續(xù)發(fā)展的原則，最大程度地節(jié)約了能源。同時(shí)，有效促進(jìn)了地方經(jīng)濟(jì)發(fā)展，解決部分下崗工人的就業(yè)的問(wèn)題，是具有較高附加值和投資回報(bào)率的項(xiàng)目。關(guān)鍵詞：冰淇淋；工藝流程；車(chē)間設(shè)計(jì)Ice Cream Plant Design of Annual Output 5000 Tons Abstract This study designed an ice cream factory of an annual output of 5000 tons ice cream, preliminarily explained the design of an ice cream factory, and then made 2 drawings of it: architecture design of the factory and design of the workshop operation process.First, this study introduced the definition, classification and industry standard of ice cream, meanwhile, expounded the operation process of ice cream。 then carried out the site selection and architecture design of the factory through regional research. Thirdly, made the material balance calculation, equipment selection, energy and water vapor balance calculation on the ice cream manufacture process。 finally, set the management structure, made a plan for environmental protection and sewage treatment, and analyzed the total investment and the payback period of the ice cream factory. The result showed that the project can produce 9 tons of ice cream per class with a total investment of million, the profit for the year of million Yuan, plant area of 3000 m2, annual profit of 12300000 Yuan, and the payback period was about years, when the production profit margins of % to the BEP.This project was in accordance with the principle of sustainable development and largely satisfied the energy saving request.
