小舜江水釀制紹興酒的可行性研究摘要:目前水源成為限制紹興酒生產(chǎn)規(guī)模擴大的主要因素,為了擴大紹興酒的生產(chǎn)規(guī)模,本研究探討用小舜江水釀制紹興酒的可行性。采用小舜江水和鑒湖水同條件分別釀制黃酒,并對所釀酒進行成份分析和感官評價。結(jié)果表明,小舜江水所釀制的酒質(zhì)量符合國家標準GB/T 136622000《黃酒》的要求,是黃酒釀造的優(yōu)質(zhì)水源之一。 但其釀成的酒與用鑒湖水所釀的傳統(tǒng)紹興酒口感和風格有差異,不能用作地理保護產(chǎn)品紹興酒的釀造用水。關(guān)鍵詞:紹興酒;黃酒;小舜江水Feasibility of Brewing ShaoXing Rice Wine by Xiaoshun River WaterLI Bobin SUN Qi WU Jian ZHUGE Qing(National Center for Quality Supervision and Testing of Rice wine, Shaoxing 312071)Abstract: At present the water source bees the primary factor to limit increasing of ShaoXing rice wine production, in order to expand the ShaoXing rice wine production, feasibility of brewing ShaoXing rice wine by Xiaoshun river water was studied.
