Bean curd residue because of containing rich dietary fiber bees the hot spot in food research recently. In this paper, the highest purity based on the single factor experiment of alkali concentration, enzyme concentration, reaction temperature and hydrolysis time, determined the optimal extraction of IDF. According to the design principle of BoxBehnken center bination, set up the quadratic mathematical models of insoluble dietary fiber extraction rate in bean curd residue by the singlefactor, selected enzyme concentration, reaction temperature and hydrolysis time 3 factors response surface analysis. The results showed that the optimal extraction conditions were enzyme concentration of 4%, reaction temperature of 60oC and hydrolysis time of 5 h. In conditions of the optimal extraction, the extraction rate of IDF was %.
